At Raes, we absolutely love Assyrtiko. But why does it have such a hold on us? A favourite among our team and our guests — we can’t get enough of this Mediterranean gem.

Assyrtiko is known for its razor-sharp acidity and pronounced minerality, making it incredibly refreshing and food-friendly. It pairs beautifully with our seasonal Tuna Crudo and the daily Market Fish, cooked simply over the hibachi.

Native to Santorini, Assyrtiko is grown in the island’s volcanic soils, which lend the wine its signature flinty, saline, and subtly smoky character. It’s the kind of wine that transports you to the island itself – and where better to enjoy it than here at Raes, overlooking Wategos Beach?

Despite its bright, coastal freshness, this particular Assyrtiko offers plenty of texture and reveals incredible depth with layers of citrus, green apple, and a delicate hint of honey from gentle ageing.

Sourced from Estate Argyros – one of Santorini’s most renowned and respected producers – this wine is a staple on our list, and one we’ll always make room for.
